Without a doubt, cornbread is one of the most liked and not to mention traditional dishes in Mexico. Between many versions, they may exist in the different corners of our country, is a tough choice picking the best one.
The version I most remember is the one that my great- grandmother used to make when I was a little girl. With her most traditional recipe which she probably learned in the early last century, and that before she taught to my mother, besides the great flavor of it, the first thing that comes to my mind is that special smell when the next day my mother warmed a piece of the bread I a skillet or griddle and toasted it both sided.
In the last four year, when my oldest daughter became Vegan, I took the time to learn and understand how to cook without using any animal product. Sometimes I’ve found out that I define it myself as the –most complicated step- when we try to assimilate a recipe. Well, I hope our vegan version of the cornbread is great for you.
