Tapioca dessert with fruit – Rock and Vegan
Tapioca dessert made with less than 10 ingredients. A vegan dessert that is very easy to make. It’s a good excuse to eat something sweet in a few minutes
Type: dessert
Cuisine: Mexican
Keywords: dessert with fruit
Recipe Yield: 8
Total Time: PT30M
Recipe Ingredients:
- Coconut milk 1 ½ cup warm
- Cinnamon
- Vanilla 1 tablespoon
- Sugar 6 tablespoons
- Tapioca 180 gr (soak in water previously for 6 hours)
- 2 mangos (cut into small pieces)
- 1 tablespoon sugar
- 1 tablespoon margarine
Recipe Instructions: 1.In a non-stick pan heat the milk over low heat, when it is warm add the vanilla, sugar and cinnamon, mix with a spoon. 2. Finally add the tapioca (remember that due to the time the pearls were in water for several hours their consistency changed, becoming soft) 3. After 10 minutes on the heat remove the cinnamon pieces and continue stirring for 10 more minutes. Mango preparation: 1. In a frying pan over medium heat place the margarine, mangos and sugar. For 5 minutes lightly sauté the fruit so as not to break the pieces and so that its appearance does not change when decorating our dessert. Recommendations: 1. Regarding the use of cinnamon for this recipe, I always recommend that it be in pieces and not in powder form, since although the flavor is great, the color of the dessert will change. 2. Serve the dessert in molds and refrigerate for at least one hour. Wait for the mango to cool before decorating. I used shredded coconut.
What is tapioca?
In Mexico, the starch extracted from yuca (the small white pearls) is known as tapioca, its appearance changes when it is hydrated and cooked, leaving a gelatinous consistency in our recipes. This dessert, besides being delicious and easy to prepare, is extremely cheap since most of the ingredients are very common in Mexican cuisine.
When we talk about tapioca, we cannot fail to mention the versatility of this ingredient. It is also perfect for making soups, since it does not have a specific flavor.
In this recipe: Tapioca Dessert, the main role of the tapioca pearls is the texture that they add to the dessert. On its own, tapioca does not have any flavor, but it is a protagonist because of the appearance it adds to the dishes and the sensation when consumed. For this reason, it has gained so much popularity in oriental desserts (The tapioca that we will use in this recipe is not the same as that of the popular Boba Tea; where black tapioca is used.)
Options to sweeten the tapioca dessert
The original recipe for Tapioca Dessert is made from cow’s milk, we substituted it with coconut milk. To sweeten it we decided to use sugar, but if you decide to sweeten it with stevia, remember that it should be ground into powder so that it is incorporated as well as possible, or if you prefer an even more natural option, it is good to sweeten this dessert with date honey, but the recipe may be a little discolored, the main intention is to make it white or light yellow because of the cinnamon.
Also, to give a little body to the tapioca dessert recipe we used margarine. If you decide you can replace it with semi-melted coconut butter. (Remember that it is not the same as coconut oil.)
The fruit we chose to decorate is mango, this for its sweet flavor and for the color that makes a beautiful contrast. We also recommend that you experiment with fruit ingredients that are also colorful; such as strawberry, peach, blackberries or whatever you want, looking for the fruit to give contrast to the base of the dessert.
For the vegetable milk option, you already know that homemade milk is always better. Since soy and almond milk generally have a lot of added sugars, you can also save money if you prepare them at home, you avoid chemicals and you pollute less, it’s a win-win (it’s not mandatory either, it has many advantages). It’s always the best option, it can be a very quick step when you plan it.
For this tapioca dessert recipe, we use coconut milk because of the body it has, it’s a little thicker. In addition, the flavor is a perfect combination for the tapioca dessert we will be preparing. Likewise, if you use almond, oat or soy milk you can add 1/2 teaspoon of cornstarch to increase the body of the liquid in the recipe, or add a little more tapioca to improve absorption.
For the decoration, the recipe, due to its gelatinous texture, looks better in individual containers, this allows us to decorate with the fruit and the final sprinkling of grated coconut. If we were to make this recipe in a large bowl and then serve it, the consistency would be whipped and would not allow the fruits to stay clean for the final presentation.
Tapioca pudding is a very simple vegan dessert to make, you can make the modifications mentioned above if you decide not to consume sugars and avoid the not-so-natural ingredients.
The Benefits of a Vegan Dessert
Tapioca pudding is not only delicious, but it is also a vegan dessert, meaning it does not contain any animal products. This makes it suitable for those following a plant-based diet, as well as those interested in reducing their consumption of animal products for ethical, health, or environmental reasons.
Vegan desserts are often healthier, as they tend to contain less saturated fat and cholesterol. By using ingredients such as coconut or almond milk, you can create a creamy and tasty dessert without the need for dairy products. Plus, being an animal-free dessert, it is more environmentally friendly, as vegan food production generally creates a smaller carbon footprint.
Adopting a vegan lifestyle doesn’t mean giving up flavor or indulgence, and this tapioca dessert is a perfect example of how pleasure and dietary responsibility can come together.
