Recipe Ingredients:

  • Coconut milk 1 ½ cup warm
  • Cinnamon
  • Vanilla 1 tablespoon

  • Tapioca 180 gr (soak in water previously for 6 hours)
  • 2 mangos (cut into small pieces)
  • 1 tablespoon sugar
  • 1 tablespoon margarine

Recipe Instructions: 1.In a non-stick pan heat the milk over low heat, when it is warm add the vanilla, sugar and cinnamon, mix with a spoon. 2. Finally add the tapioca (remember that due to the time the pearls were in water for several hours their consistency changed, becoming soft) 3. After 10 minutes on the heat remove the cinnamon pieces and continue stirring for 10 more minutes. Mango preparation: 1. In a frying pan over medium heat place the margarine, mangos and sugar. For 5 minutes lightly sauté the fruit so as not to break the pieces and so that its appearance does not change when decorating our dessert. Recommendations: 1. Regarding the use of cinnamon for this recipe, I always recommend that it be in pieces and not in powder form, since although the flavor is great, the color of the dessert will change. 2. Serve the dessert in molds and refrigerate for at least one hour. Wait for the mango to cool before decorating. I used shredded coconut.

Also, to give a little body to the tapioca dessert recipe we used margarine. If you decide you can replace it with semi-melted coconut butter. (Remember that it is not the same as coconut oil.)

The fruit we chose to decorate is mango, this for its sweet flavor and for the color that makes a beautiful contrast. We also recommend that you experiment with fruit ingredients that are also colorful; such as strawberry, peach, blackberries or whatever you want, looking for the fruit to give contrast to the base of the dessert.

For the vegetable milk option, you already know that homemade milk is always better. Since soy and almond milk generally have a lot of added sugars, you can also save money if you prepare them at home, you avoid chemicals and you pollute less, it’s a win-win (it’s not mandatory either, it has many advantages). It’s always the best option, it can be a very quick step when you plan it.

For this tapioca dessert recipe, we use coconut milk because of the body it has, it’s a little thicker. In addition, the flavor is a perfect combination for the tapioca dessert we will be preparing. Likewise, if you use almond, oat or soy milk you can add 1/2 teaspoon of cornstarch to increase the body of the liquid in the recipe, or add a little more tapioca to improve absorption.

For the decoration, the recipe, due to its gelatinous texture, looks better in individual containers, this allows us to decorate with the fruit and the final sprinkling of grated coconut. If we were to make this recipe in a large bowl and then serve it, the consistency would be whipped and would not allow the fruits to stay clean for the final presentation.
